Taleggio cheese , from the north of Italy, has an uncooked semi-hard dough, light to light straw yellow. As it is not cooked, its maturation remains until consumption. It has a remarkable flavor, sweet and with a slight acidity, and truffled aftertaste.

It is a perfect combination with the wines produced with grapes that have undergone the apprenticeship, as the Amarones. Try Tallegio with the delicious Amarone della Valpolicella by Giodano Prà .
